Honey-Glazed Tilapia with Roasted Vegetables


Hey Divas, I thought I'd share a healthy, inexpensive, quick dinner recipe with you! I love honey and have lately gotten into raw, artisanal honeys. I though it would be great to combine my love of honey with a fish recipe, so I bought some tilapia and whipped up a great honey based marinade, and served it over roasted zucchini & baby peppers and brown rice. The result was delicious!

Domestic Diva's Honey Glazed Tilapia

2 tilapia filets
1 tbsp good honey
1/4 cup tamari or soy sauce
1 lime
1 tsp cayenne pepper
2 tbsp grapeseed oil or canola oil
1 zucchini, cut into long slices
5 baby bell peppers or 1 bell pepper, cut into long slices
1 tbsp olive oil
2 cups brown rice, cooked
salt and pepper

Directions:

For the marinade, whisk together the honey, tamari, cayenne pepper and lime juice. Add the fish, coating it with the mixture, and allow to marinade for at least twenty minutes.

Meanwhile, preheat the oven to 350 degrees. Toss the zucchini and peppers with the olive oil and place in a pyrex or roasting pan. Salt and pepper to taste. Place in the oven and roast for twenty minutes, or until cooked.

To cook the fish, in a saute pan, heat the grapeseed oil. Add the fish, cooking for 2 minutes on each side, or until cooked through.

To place, place some of the rice in the bottom of the dish. Top with the veggies and then lay the fish on top. Enjoy!
