Bourbon Caramel Brownies


Happy Columbus Day!

I'm deep into the revise on my new book, so it's not a holiday for me. But I'm hitting up a Florence + The Machine show at the Hollywood Bowl tonight. She's amazing—very excited!

The weather has also finally cooled off, making me believe that it really is fall.

For this holiday, I was thinking... chocolate... caramel... dessert...

I love these brownies and baked them recently for the Cookies for Cody charity bake sale. I just realized that I never actually shared the recipe, so what better day than today?

Bourbon Caramel Brownies

Makes 9 brownies
Baking time: about 25 minutes

Ingredients

2 eggs
1/2 tsp vanilla extract
1 cup sugar
1/2 lb bittersweet chocolate
1/2 cup butter
1/2 cup flour
1/4 cup unsweetened cocoa powder

bourbon caramel sauce
1 cup sugar
1/4 cup bourbon
1/4 cup butter
1/4 cup heavy cream

Directions


1. To make the bourbon caramel sauce, cook the sugar over medium-low heat for about 10 minutes or until golden brown and caremalized. Add the bourbon and stir to combine. Then, add the butter and cream and stir to combine. Cook for another 10 minutes, or until the sauce comes together.

2. To make the bacon brownies, preheat the oven to 350 degrees.

3. Whisk together the eggs, vanilla and sugar until smooth. In a double boiler, melt the chocolate and butter, stirring to combine. Add it to the eggs/vanilla/sugar mixture and stir to combine. Then, sift together the flour and cocoa powder, and fold into the wet mixture. 

4. Spread the batter into a parchment-lined 8 inch square pan. Drizzle the caramel sauce over the top (note you may not use all of the caramel). Bake for 20-25 minutes.

5. Let cool in the pan. Cut into 2 inch squares (should yield 9 brownies).

Cookies for Cody Charity Bake Sale: Bourbon-Caramel Brownies


I'm not sharing a recipe today.

But you can eat the Bourbon-Caramel Brownies pictured above.

That's right. I'm baking them for one lucky winner as part of the Cookies for Cody online charity bake sale. It's a cancer fundraising to benefit the nephew of my blogger friend Stephanie from The Recipe Renovator. Here's a little more on Cody from Stephanie:

Charity Event: Bakesale for Japan on Saturday, April 2nd at 10am - 2pm


We all know that baked goods make the world go round -- but they can also make the world a better place!

On Saturday, April 2nd from 10am-2pm, Bakesale for Japan is putting on old fashioned bake sales across Los Angeles and the country to benefit relief efforts in Japan. Other cities involved in the fundraiser include San Franciso, Portland, Boston, Philadelphia, New York, Chicago, Austin, Salt Lake City, and Hawaii, to name a few. 

Proceeds from the bake sales will be donated to Peace Winds Japan, a non-governmental organization that is currently contributing 100% of its donations to the relief efforts in Japan.

Pei Wei Asian Diner Feeds the Holiday Spirit


As the saying goes, give and you shall receive! Help feed the hungry this holiday season by bringing a non-perishable food item to your local Pei Wei and receive 25% off one entrée of your choice. All donated food items will be given to a local food bank to fight hunger in your community.

Now that's what I call guilt-free dining! Here at Domestic Divas, local food banks are our primary charity cause. It's great to know that restaurants in our community share our vision for feeding the hungry during this holiday season.

Eat My Blog Charity Bake Sale Raises Over $12,000 for the Los Angeles Regional Food Bank!


Breaking news this morning -- the Eat My Blog charity bake sale to benefit the Los Angeles Regional Food Bank has raised over $12,000 in just over a year.

On Saturday, our third sale raised $3,750, just in time for the holiday season. Thanks to the organizers (Cathy, Diana, Laurie, and Amy), all the bakers (list of bakers here), Tender Greens in Weho, and everyone who came out to support the sale. I donated my famous Bacon Brownies with Bourbon Caramel Sauce, a recipe I designed especially for Eat My Blog.

Truckin' Through the Holidays Charity Food Festival

On Thursday night, I attended the Truckin' Through the Holidays charity food festival to benefit the Los Angeles Regional Food Bank (one of my favorite charities). The event took place at Jaxon, a loft-like home furnishing store in Culver City. Not only was the parking lot packed with food trucks, but the interior of the store boasted an array of local, specialty food vendors handing out free samples of their wares and an open bar stocked with delicious Hungarian wines.

Of everything I sampled at the booths, my favorites included the super fudgey brownies from Essential Chocolate Desserts, the fabulous vegan organic dark chocolate truffles from Nicobella (these would make great holiday gifts), and the  lattes from Matcha Source, made with fresh Japanese matcha and almond milk. Another great sponsor was The Haute Lunch Bag, a social network for women to explore their city, share reviews, and find exclusive lunch specials. What a great idea! Both the website and apps will be launching soon.

After indulging in sweets and tea, we ventured to the open bar. I was excited to find that it was stocked with Hungarian wines, which are usually delicious, but rarely imported to the U.S. Of the wines we tasted, my favorite was the Tisza River Riesling (2007), a dry take on the varietal that was light and flavorful. I also enjoyed the Cabernet Sauvignon (2003), which was bold and full-bodied with a little age under its belt. Both were lovely and gone quickly.

After quenching our thirst, it was time for some food truck action. We chose the Komodo food truck, specializing in street food with a gourmet twist. We ordered several of the tacos, including the Blazin' Shrimp which were definitely blazing hot, the Meatballs with Romesco Sauce, a super porky confection topped with a red bell pepper sauce, and the Garlic Fries, served with homemade garlic oil and parmesan cheese. It was the perfect way to cap a perfect evening, all in the name of charity.

Charity Food Truck Event Tonight in Los Angeles!

Guess where I'll be tonight?

At "Truckin' Through the Holidays" charity food festival!

This promises to be a great event. Admission is free, and it's for a great cause. All donations and canned goods collected will go to the Los Angeles Regional Food Bank. So if you're free tonight, or just looking for a fun place to nosh, come on by.

Trucking Through The Holidays" Charity Food Truck Festival - A charitable evening, benefiting the Los Angeles Regional Foodbank, filled with great food, free libations, music, and good times! Thousands of Angeleno’s will be invited to attend this event. To participate, food trucks will be making donations to the foodbank to help nourish those in need throughout the holiday season. Attendees can hop from one food truck to another, as well as enjoy offerings from local restaurants and vendors situated inside Jaxon Home’s spacious showroom. An open bar will serve up libations from various alcohol vendors, including RND Vodka. The event is open to the public and free to attend. Don't Forget About The Eat My Blog Charity Bake Sale On Saturday June 9th!


Taking place Saturday, June 19th. From 10 a.m. to 4 p.m. at Tender Greens in West Hollywood (8759 Santa Monica Boulevard!  I'll be donating a batch of my signature Bacon Brownies With Bourbon Caramel Sauce.  Here's an excerpt from the press release:
LOS ANGELES (May 20, 2010) Angelenos with a penchant for gourmet sweets and savories are invited to attend the second annual Eat My Blog bake sale on Saturday, June 19th. From 10 a.m. to 4 p.m., Tender Greens in West Hollywood (8759 Santa Monica Boulevard) will host this event on their outdoor patio where Eat My Blog will feature over 2,000 baked goods from 70+ bakers, including carrot cake cookie sandwiches, bacon chocolate chip cookies, homemade salted caramels, and strawberry balsamic cake. All items will be priced between $1 to $4. 

All proceeds from this tasty event will be donated to the Los Angeles Regional Foodbank to help raise a greater awareness for those looking to give back to the Los Angeles community.

The Eat My Blog tables will also be lined with special donations from local chefs and restaurants including chef and KCRW Good Food host Evan Kleiman, Chicks with Knives, Debbie Lee, Drago Centro, Starry Kitchen, Bakelab, Cube, Fraiche, Choppe Choppe, Hollywood Corner, Valerie Confections, Plaisir, Scoops Ice Cream, and Tender Greens. 

In addition, The Coffee Bean & Tea Leaf will be featuring a selection of hot beverages to help wash down all of those scrumptious sweet treats!
“We are excited to partner with the Foodbank again, especially after visiting the facility this winter to see how the money we raised would be used,” said Cathy Danh, author of Gastronomy and founder of Eat My Blog. “It was an eye-opening experience for all of us on the planning committee, and we left that day eager to make an even greater impact this time around.”

National Food Bloggers Bake Sale Raises Over $16,500 For Share Our Strength!


Divas, I'm pleased to announce that Saturday's National Food Bloggers Bake Sale raised over $16,500 for Share Our Strength! 

I participated in the Los Angeles portion of the event, donating a batch of my famous Bacon Brownies With Bourbon Caramel Sauce (for the Cooking Video and Recipe click here!).  I also swung by the event, chatted it up with some of my fellow bloggers and snatched up an armload of goodies for Kuzak and I to feast on that night. National Food Bloggers Bake Sale - Saturday April 17th At The Grove!


For those of you NOT going to Coachella (I bypassed the festival to catch a Faith No More show in SF this weekend), check out the National Food Bloggers Bake Sale taking place this Saturday!  There are events all over the country (click here to see the full list).  I'll be participating in the Los Angeles sale and donating a big batch of my signature Bacon Brownies With Bourbon Caramel Sauce!

Here are the details:

The first annual National Food Bloggers Bake Sale, part of the Great American Bake Sale, will be held on April 17. Organized by Gaby Dalkin of WhatsGabyCooking.com, food bloggers from across the country will unite to support the cause by holding bake sales in their states. Readers will have the opportunity to taste the baked goods from their favorite food blogs at each state’s bake sale location.

Domestic Divas will be participating in the National Food Bloggers Bake Sale - Los Angeles!  The sale takes place on Saturday April 17th, 2010 from 10:30 am - 1:30 pm at Morel's French Steakhouse and Bistro at The Grove in Hollywood. The market is located at 189 The Grove Dr.  The bake sale is to benefit Share Our Strength, an fabulous organization that strives to end childhood hunger.

Stir It 28 - A Food Blogger Benefit for Haiti Taking Place In Three Cities on Februrary 21st!

We're still in the planning stages, but I wanted to let the cat out of the bag so you can mark your calendars for this event!

On Sunday, February 21st, Stir It 28 will host fundraisers for Haiti that will be held on the same day in several different cities (right now Los Angeles, Atlanta and Chicago), featuring food and drinks donated by chefs, restaurants, home cooks and food bloggers.  The fabulous Chrystal of Duo Dishes  is organizing the Los Angeles portion of the fundraiser where I'll be donating my services (menu to be announced!).  So this would be a great night to support a good cause and chow down on my sure to be delicious grub at the same time. 

If you can't make the event, as the moniker suggests, there are plenty of other ways to give all 28 days of February than just this fundraiser (just click here).

Here are the event details as they stand:
STIR IT 28 FUNDRAISER
Each one of us will be hosting a food fundraising event on Sunday, February 21st in our respective cities–Los Angeles, Atlanta and Chicago. We’re asking chefs, restaurants, home cooks and food bloggers to participate by donating 2-3 dishes that will feed 15-20 people each. The events will be open to the public with advanced tickets or limited ticket sales at the door. You can tell your friends and colleagues to purchase tickets from Bren or Courtney’s blogs. Click the image that says “Purchase Tickets For STIR IT 28 Culinary Event-Feb. 21st”. Be sure to indicate the city’s event that you plan to attend. Of course, if you are part of the volunteer team (that includes making food or working the event), you will not have to purchase a ticket. We’re still formulating our respective evening’s details, but here’s what we have so far:

Meatless Monday: Risotto With Walnuts And Winter Greens (Plus Music On Tap Featuring Camera Obscura)


It's all about risotto.

It's the first serious dish I learned to cook from Jaime Oliver in fact, right after I'd moved to Los Angeles.  When I was younger, I acquired a taste for it after my mother, The Original Diva, returned from a trip to Italy with a recipe for beet risotto in tow.  Obviously, it had a big impact on us kids, as risotto is one of my favorite dishes to make and a specialty in my Top Chef brother's restaurant (they do risotto fresh on the half hour).  And actually, it's at his urging that I've been blogging more risottos for Meatless Monday.

The great thing about this creamy rice dish is that it's one of the most versatile things you could possibly learn to cook, and once you have a basic recipe down pat, the variations are literally endless.  If you ask me, it's a must have in every divas repertoire!


This special meatless risotto utilizes a vegetable that's currently peaking in season: winter greens!  Right now, winter greens are all over the markets from kale to collard greens to rainbow chard, which is what I used in this recipe.  But any variety will work!  Then to add some protein and nuttiness to this recipe, I finished the risotto by whipping in roasted walnuts, parmesan reggiano and roasted walnut oil (instead of butter as is used in most restaurants).

Umm... delicious doesn't begin to describe it!  The nuttiness of the walnuts pairs superbly with the other flavors in the dish, making this a hearty, rich, but also nutrient dense meal (both winter greens and walnuts are considered superfoods with a stunning array of health benefits).

So try this risotto!  You won't miss the meat.  I promise.

Risotto with Walnuts and Winter Greens
Serves 4 people
Cooking time: 40 minutes

Ingredients
1 bunch rainbow chard or other winter green such as kale (about 4 cups), chopped
1/2 cup walnuts
2 tablespoons olive oil
4 cups vegetable broth
1 shallot, chopped or half small Spanish onion, chopped
1 garlic clove, chopped
1 cup arborio rice
1/2 cup dry white wine
1/2 cup parmesan reggiano, grated
2 tablespoons walnut oil
salt and pepper

Directions
Preheat the oven to 350 degrees.

To cook the walnuts, arrange them in a single layer in a pie pan or other oven proof dish.  Toast them in the oven until golden, about 4 minutes.  Remove from the oven and allow to cool.  Then, chop them.

To make the risotto, heat 2 tbsp of the olive oil in a heavy bottomed pan over medium heat. Add the shallots or onion and saute until translucent, about 5 minutes. Add the garlic and stir for one more minute. Then add the rice and stir for another two minutes. Pour in the white wine and stir until absorbed. Once the wine has been absorbed, slowly add the vegetable stock 1/2 a cup at a time, stirring until absorbed before adding more stock.

Once the rice is almost cooked (you've used about 1/2 to 3/4 of the stock), stir in the chopped greens.  Continue adding stock and cooking until the rice is al dente and the greens are tender (note: you may not use all of the stock).  Finish the risotto by stirring in the walnuts, parmesan and walnut oil.  Season to taste with salt and pepper.

To plate, either serve family style or spoon some risotto into the center of a plate.  Top with a little fresh chopped parsley.  Enjoy!

I have an exciting announcement to make!

Inspired by Cathy of Gastronomy who also organized Eat My Blog, I've joined my fellow food bloggers in Blog Away Hunger by donating all of my January ad revenue toward the World Food Program's Haiti disaster relief efforts.  Blog Away Hunger is the brainchild of Marc Matsumoto of No Recipes  and was founded to raise awareness for the World Food Program.

Bacon Brownies with Bourbon Caramel Sauce


Happy Holidays!

The results from the Bacon Brownie poll are in, and the winner is, "For Shiz" with 64 percent of the vote, followed by "Just Make Me Some" getting 35 percent. So, as my holiday gift to you, I'm sharing my secret recipe for Bacon Brownies with Bourbon Caramel Sauce!

I created this dessert specially for the Eat My Blog charity bake sale, and the brownies sold out in under an hour.  It's a unique dessert, rich, meaty, firing on all palate cylinders, sweet and salty and buttery and chocolaty and bacony!  It combines all the best things in the world, from chocolate, to booze, to bacon, to butter, to sugar, all into one tidy little package.


Enjoy your holidays - and maybe some Bacon Brownies, too!

Note: for the sake of the sale, I baked the caramel sauce into the brownies, but if you're serving this as dessert for a dinner party, you can bake the brownies and then drizzle the caramel sauce over them right before serving.

Bacon Brownies with Bourbon Caramel Sauce
Makes 9 brownies

2 eggs
1/2 tsp vanilla extract
1 cup sugar
1/2 lb bittersweet chocolate
1/2 cup butter
1/2 cup flour
1/4 cup unsweetened cocoa powder
1 cup thick cut bacon, chopped

bourbon caramel sauce:
1 cup sugar
1/4 cup bourbon
1/4 cup butter
1/4 cup heavy cream

Directions:

To make the bourbon caramel sauce, cook the sugar over medium-low heat for about 10 minutes or until golden brown and caremalized.  Add the bourbon and stir to combine.  Then, add the butter and cream and stir to combine.  Cook for another 10 minutes, or until the sauce comes together.

To make the bacon brownies, preheat the oven to 350 degrees.

Cook the bacon in a saute pan over medium heat until crispy.  Remove from pan and drain on paper towels.

Whisk together the eggs, vanilla and sugar until smooth. In a double boiler, melt the chocolate and butter, stirring to combine. Add it to the eggs/vanilla/sugar mixture and stir to combine. Then, sift together the flour and cocoa powder, and fold into the wet mixture.  Fold in the bacon.


Spread the batter into a parchment-lined 8 inch square pan.  Drizzle the caramel sauce over the top.  Bake for 20-25 minutes.

Let cool in the pan.  Cut into 2 inch squares (should yield 9 brownies).
