I did make a slight change for this year's bake sale -- I made the caramel sauce with brown sugar, which I thought turned out great (slightly richer, deeper flavor).
Also, I recommend getting both 1) good quality chocolate and 2) good quality bacon. I normally use Niman Ranch's thick cut bacon. Also, for larger batches, I often cook the bacon in the oven and then crumble it as opposed to stove top cooking (faster to do a lot of bacon). You can fold the bacon in the mixture, or for bake sales, I'll often put some batter down, then sprinkle the bacon evenly, and cover with the rest of the batter. This ensures even bacon distribution.
One final idea... for the bake sales, I bake the caramel sauce into the brownies. However, if you're serving them table side, as I did over T-Day, I like to plate a brownie (sans caramel), and then top with vanilla ice cream and a slab of crispy bacon, all drizzled with the caramel sauce. The piece of bacon with the hot caramel sauce on it has to be one of the best things I've ever tasted! I'm considering doing that as a bacon course at a future dinner party.
