I made a simple marinade last night for Halibut Steaks - olive oil, lemon, garlic, lemon pepper, parsley and a little dill - it was delicious!

DeleteMy favorite grilling recipe is shish-ke-bob with lots of tomatoes, green pepper, onion and pineapple but I'm a bit tired of Adolph's meat marinade for the meat. The Fajitas marinade might be just the change I'm looking for.

I love using a marinade of soy sauce, olive oil, onions, garlic, and montreal steak seasoning when grilling beef.

ReplyDeleteThis is maybe a strange idea, but when I was staying at a B&B in Alaska, the owner marinated moose meat (which tends to be tough) in a combo of Coca Cola and Teriyaki and it was DELISH!! The Coke tenderizes the meat. I am a vegetarian now, but... I would eat wild game if it were provided (no mooses in Texas!) :)

DeleteI absolutely love the flavor of lemon. When I grill veggie kabobs, I like to just make an informal marinade of lemon or lime juice, lemon pepper flakes, and sea salt, like Himalayan rock salt.
ReplyDeleteWhen I used to grill chicken for my (ex) boyfriend (LOL) I would marinate the chicken breasts in Italian dressing. I really prefer to cook from scratch, but Italian dressing has the perfect combo of salt, oil, and herbs and you don't have to prep anything! I would marinate for a couple hours to overnight if you really want flavor.

One of my favorite marinandes for chicken is greek yogurt, garlic and oregano. Yogurt makes the meat tender.

My favorite salmon marinade recipe is from the NYT cookbook, and works for grilling or saute. Marinate for 4 hours, or just slather it on.
ReplyDeleteLemon, olive oil, vermouth (or white wine - works fine), thyme, marjoram, parsley and a tiny bit of sage. Salt and pepper to taste. It's amazing! :)
I like to use fresh citrus juices as marinades add tenderness and flavor!:)
